Method
Make the Pie Dough
- In a large bowl, mix flour, sugar, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together.
- Divide into two discs, wrap, and refrigerate for at least 1 hour.
Prepare the Apple Filling
- Peel, core, and slice apples.
- Toss them with sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes.
Assemble the Pie
- Preheat oven to 375°F (190°C).
- Roll out one dough disc and place it in a 9-inch pie pan.
- Pour in apple filling and dot with butter.
- Roll out the second dough disc and place over the filling. Seal edges and cut slits for steam to escape.
- Brush the top with beaten egg.
Bake & Cool
- Place the pie on a baking sheet and bake for 50-60 minutes until golden brown.
- Let it cool for at least 2 hours before slicing.
Notes
- Store: Keep at room temperature for up to 2 days or refrigerate for up to 5 days.
- Reheat: Warm in a 350°F oven for 10-15 minutes.
- Serve: Best enjoyed warm with vanilla ice cream or whipped cream!
