Step 1: Melt the White Chocolate
- Heat ¼ cup of heavy cream until warm (not boiling).
- Pour over the chopped white chocolate and let sit for 1 minute.
- Stir until smooth. If needed, microwave in 10-second bursts, stirring in between.
- Let it cool slightly.
Step 2: Whip the Cream
- In a chilled mixing bowl, whip the remaining ¾ cup of heavy cream until soft peaks form.
- Add vanilla extract and powdered sugar. Whip until stiff peaks form.
Step 3: Fold It Together
- Stir a small scoop of whipped cream into the melted chocolate to lighten it.
- Gently fold in the remaining whipped cream using a spatula—don’t overmix!
Step 4: Chill & Serve
- Spoon the mousse into serving glasses.
- Chill for at least 2 hours before serving.
- Garnish with white chocolate shavings, berries, or caramel drizzle.
