Step 1: Prepare the Crust
- Mix flour, sugar, and salt in a bowl. Cut in butter until mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough forms. Roll out and fit into a 9-inch pie pan.
- Pre-bake at 375°F (190°C) for 15 minutes or until golden. Set aside to cool.
Step 2: Make the Filling
- In a saucepan, whisk together sugar, cornstarch, lemon juice, and water.
- Cook over medium heat, stirring constantly until thickened (3-5 minutes).
- Remove from heat, stir in vanilla, and let cool slightly.
- Toss strawberries in the glaze, coating evenly.
Step 3: Assemble & Chill
- Pour the strawberry filling into the cooled crust.
- Refrigerate for at least 2 hours to set.
- Serve chilled with whipped cream or vanilla ice cream.
