Ingredients
  

For the Pie Crust:
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold & cubed
  • ¼ cup ice water
  • ½ teaspoon salt
  • 1 tablespoon sugar
For the Strawberry Filling:
  • 5 cups fresh strawberries hulled & sliced
  • ¾ cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • ½ cup water
  • 1 teaspoon vanilla extract

Method
 

Step 1: Prepare the Crust
  1. Mix flour, sugar, and salt in a bowl. Cut in butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until dough forms. Roll out and fit into a 9-inch pie pan.
  3. Pre-bake at 375°F (190°C) for 15 minutes or until golden. Set aside to cool.
Step 2: Make the Filling
  1. In a saucepan, whisk together sugar, cornstarch, lemon juice, and water.
  2. Cook over medium heat, stirring constantly until thickened (3-5 minutes).
  3. Remove from heat, stir in vanilla, and let cool slightly.
  4. Toss strawberries in the glaze, coating evenly.
Step 3: Assemble & Chill
  1. Pour the strawberry filling into the cooled crust.
  2. Refrigerate for at least 2 hours to set.
  3. Serve chilled with whipped cream or vanilla ice cream.

Notes

  • For extra crunch, try a graham cracker crust instead of a traditional pie crust.
  • Make it creamy by adding a layer of whipped cream or cream cheese.
  • Use fresh, ripe strawberries for the best flavor.
