  • 1 cup unsalted butter softened
  • 1½ cups granulated sugar
  • 1 large egg
  • 3 tablespoons strawberry puree
  • 1 teaspoon vanilla extract
  • 2¾ cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon pink food coloring
For rolling
  • ½ cup granulated sugar
  • 1 teaspoon red colored sugar optional

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Beat butter and sugar until light and fluffy.
  3. Add egg, strawberry puree, pink food coloring and vanilla. Mix well.
  4. In another bowl mix flour, baking powder, and salt.
  5. Add dry ingredients to the wet mixture.
  6. Roll dough into small balls.
  7. Roll each ball in sugar mixture.
  8. Place on baking sheet and flatten slightly.
  9. Bake for 10 to 15 minutes until edges are lightly golden.
