Step 1: Preheat oven
- Set oven to 375°F.
Step 2: Mix strawberry filling
- In a large bowl, mix strawberries, sugar, lemon juice, cornstarch, and vanilla. Let sit for a few minutes.
Step 3: Make the batter
- In another bowl, stir together flour, sugar, baking powder, and salt. Add milk and melted butter. Mix until smooth.
Step 4: Assemble
- Pour strawberry mixture into a greased 8x8 baking dish. Spoon batter on top—don’t worry if it looks uneven.
Step 5: Bake
- Bake for 35–40 minutes, until topping is golden and strawberries are bubbling.
Notes
- Serve it warm with vanilla ice cream if you have some. If not, whipped cream or even just a splash of cold milk is delish.
- It’s good cold too, like the next morning straight outta the fridge while you're hiding in the kitchen before the chaos starts again.
- If you don’t have fresh strawberries, frozen works fine. Just thaw ‘em first and drain off the extra juice.
