Ingredients
  

For the filling:
  • 4 cups fresh strawberries hulled and sliced
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract optional
For the topping:
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup butter melted

Method
 

Step 1: Preheat oven
  1. Set oven to 375°F.
Step 2: Mix strawberry filling
  1. In a large bowl, mix strawberries, sugar, lemon juice, cornstarch, and vanilla. Let sit for a few minutes.
Step 3: Make the batter
  1. In another bowl, stir together flour, sugar, baking powder, and salt. Add milk and melted butter. Mix until smooth.
Step 4: Assemble
  1. Pour strawberry mixture into a greased 8x8 baking dish. Spoon batter on top—don’t worry if it looks uneven.
Step 5: Bake
  1. Bake for 35–40 minutes, until topping is golden and strawberries are bubbling.

Notes

  • Serve it warm with vanilla ice cream if you have some. If not, whipped cream or even just a splash of cold milk is delish.
  • It’s good cold too, like the next morning straight outta the fridge while you're hiding in the kitchen before the chaos starts again.
  • If you don’t have fresh strawberries, frozen works fine. Just thaw ‘em first and drain off the extra juice.
