Step 1: Prep the crust
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake at 350°F for 10 minutes, then let cool.
Step 2: Make the cheesecake filling
- Beat cream cheese until smooth. Add sugar, eggs one at a time, then vanilla and sour cream. Mix until creamy. Pour over the cooled crust.
Step 3: Bake the cheesecake
- Bake at 325°F for 55–60 minutes. The center should jiggle slightly. Let cool at room temperature for 1 hour, then chill in the fridge for at least 4 hours or overnight.
Step 4: Make the salted caramel topping
- Melt sugar over medium heat until amber. Add butter, stir until melted, then slowly whisk in cream. Stir in sea salt. Let cool slightly, then pour over cheesecake.
Step 5: Serve
- Slice, drizzle with extra caramel if desired, and enjoy!
