Ingredients

  • 1/2 cup unsalted butter softened
  • 3/4 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1/2 tsp red food coloring gel
  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar for coating
  • 1/2 cup powdered sugar for coating

Method

  1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Beat the butter, brown sugar, and granulated sugar until light and fluffy. Scrape down the bowl.
  3. Add the eggs one at a time, mixing well after each. Mix in the vanilla and red food coloring.
  4. Sift together the flour, cocoa powder, baking powder, and salt in a separate bowl. Add to the wet mixture and beat until combined.
  5. Roll 1-ounce portions of dough first in granulated sugar, then in powdered sugar, coating fully.
  6. Place dough balls an inch apart on the baking sheet. Bake for 10 minutes, until puffed and cracked but still a little gooey in the center.
  7. Cool on the pan for a few minutes, then move to a wire rack.

Notes

  • Do not chill the dough. Chilling stops the cookies from spreading and cracking the way they should.
  • Store baked cookies in an airtight container at room temperature for up to 5 days.
  • Gel food coloring gives the most color with the least amount, since it is more concentrated than liquid coloring.
