Ingredients

  • 1 cup cold unsalted butter cubed
  • 2/3 cup powdered sugar
  • 1/2 tsp almond extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/3 cup seedless raspberry jam

Method

  1. Whisk flour and salt together.
  2. Cut cold butter, powdered sugar, and almond extract into the flour until crumbly.
  3. Roll into 1-tablespoon balls.
  4. Press a thumbprint into the center of each ball, pinching closed any cracks.
  5. Chill 20-30 minutes in the fridge or 10-15 in the freezer.
  6. Preheat oven to 350F. Stir jam smooth and spoon into each well.
  7. Bake 14-16 minutes, until edges are just barely golden.
  8. Cool completely on the pan before serving.

Notes

  • The dough looks crumbly and dry before it's rolled -- that's normal for this cut-in shortbread, not a sign to add more butter.
  • Chilling the shaped dough keeps the jam wells from puffing closed in the oven.
  • Nutrition is an estimate calculated from the ingredients and will vary with brands and portion size.
