Prep Time 15 minutes
Freeze Time 6 hours
Servings: 6
Course: Dessert
Cuisine: American

Ingredients

  • 2 cups pineapple chunks
  • 1/2 cup pineapple juice
  • 2 tbsp honey or sugar
  • 1 tbsp lemon juice
  • 1/4 cup water

Method

  1. Prepare the pineapple by cutting it into small, even chunks. If using canned pineapple, drain it well before use.
  2. Add pineapple chunks, pineapple juice, honey or sugar, lemon juice, and water into a blender.
  3. Blend the mixture until completely smooth and creamy. Pause to scrape down the sides if needed to remove any remaining chunks.
  4. Taste the mixture and adjust sweetness or tanginess as needed. Blend again briefly after adjustments.
  5. Place popsicle molds on a flat surface and carefully pour the mixture into each mold, leaving a small gap at the top.
  6. Insert popsicle sticks into each mold. If needed, freeze for one hour before inserting sticks so they stay centered.
  7. Transfer the molds to the freezer and freeze for at least 6 to 8 hours or until fully firm. For best results, freeze overnight.
  8. To remove, run warm water over the molds for a few seconds and gently pull the popsicles out.
  9. Serve immediately or store in an airtight container in the freezer for later use.

Notes

  • Adjust sweetness based on the ripeness of the pineapple
  • For creamy texture, replace water with coconut milk
  • Store popsicles properly to maintain flavor and texture
