Ingredients
  

  • 3 cups pineapple chunks
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup butter melted

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a baking dish well on all sides.
  2. Add pineapple chunks to a mixing bowl. Sprinkle sugar and cornstarch over the top. Add lemon juice. Stir gently until all pieces are coated and the mixture looks slightly glossy. Pour into the baking dish and spread evenly.
  3. In a separate bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Stir until evenly mixed.
  4. Pour melted butter slowly into the dry mixture while stirring. Continue mixing until the mixture forms a crumbly texture with small and medium clumps.
  5. Sprinkle the crumb topping evenly over the pineapple filling. Keep the layer loose and do not press it down.
  6. Place the dish in the oven and bake for 30 to 35 minutes. Look for a golden brown top and bubbling fruit around the edges.
  7. Remove from the oven and let it rest for 10 to 15 minutes before serving. This helps the filling thicken and set properly.

Notes

  • Fresh or canned pineapple can be used
  • Drain canned pineapple very well before using
  • Best served warm for the best texture and flavor
  • Can be stored in the refrigerator and reheated before serving
