Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup strawberry jam warmed

Method

  1. Cream butter, peanut butter, and both sugars until light and fluffy, about 2 minutes.
  2. Beat in egg and vanilla extract.
  3. Whisk flour, baking soda, and salt; fold into wet ingredients until just combined.
  4. Roll into 1-tablespoon balls. Preheat oven to 350°F. Bake plain dough balls 8-9 minutes, until just set.
  5. While warm, press a well into each cookie.
  6. Warm jam until smooth; spoon about 1/2 tsp into each well.
  7. Bake 4-5 minutes more, until jam is glossy and set.
  8. Cool completely on the pan before serving.

Notes

  • Press the indent while the cookies are still warm from the oven — a cooled cookie is much more likely to crack at the edges.
  • The dough looks dry and crumbly before baking; that's normal for peanut butter dough and bakes up soft anyway.
  • Nutrition is an estimate calculated from the ingredients and will vary with brands and portion size.
