Ingredients
  

For the Crust:
  • 24 Oreo cookies no need to remove the filling
  • 5 tbsp melted butter
For the Cheesecake Filling:
  • 3 8 oz blocks of cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ¾ cup sour cream
  • 1 cup crushed Oreo cookies
  • For the Topping Optional:
  • Whipped cream
  • Extra crushed Oreos
  • Chocolate drizzle

Method
 

Step 1: Make the Oreo Crust
  1. Preheat oven to 325°F (163°C).
  2. Crush Oreos into fine crumbs (using a food processor or a ziplock bag and rolling pin).
  3. Mix crumbs with melted butter and press firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
  1. In a large bowl, beat cream cheese until smooth.
  2. Add sugar and vanilla extract, mixing until combined.
  3. Add eggs, one at a time, mixing on low speed to avoid overbeating.
  4. Stir in sour cream, then gently fold in crushed Oreos.
Step 3: Bake the Cheesecake
  1. Pour filling over the cooled crust and smooth the top.
  2. Bake for 50-55 minutes, or until the edges are set and the center has a slight jiggle.
  3. Turn off the oven and let cheesecake cool inside with the door slightly open for 1 hour.
  4. Transfer to the fridge and chill for at least 4 hours (overnight is best).
Step 4: Decorate & Serve
  1. Once chilled, remove from pan and top with whipped cream, crushed Oreos, and chocolate drizzle.
  2. Slice and serve!
