No Bake S’mores Cake

A layered dessert made with graham crackers, marshmallow cream filling, and chocolate ganache.

Ingredients
  

  • 2 cups heavy cream
  • 8 oz cream cheese softened
  • 1 cup sugar powdered
  • 1 tsp vanilla extract
  • 1 ½ cups marshmallow creme
  • 2 boxes graham crackers
  • 1 ½ cups chocolate chips
  • ½ cup heavy cream

Method
 

  1. Beat softened cream cheese until smooth and lump free
  2. Add powdered sugar and vanilla extract, mix until creamy
  3. Mix in marshmallow creme until fully combined
  4. In a separate bowl, whip heavy cream to stiff peaks
  5. Gently fold whipped cream into the marshmallow mixture in batches
  6. Arrange a layer of graham crackers in the bottom of a dish, breaking pieces to fit gaps
  7. Spread a thick, even layer of the cream mixture over the crackers
  8. Repeat layers of graham crackers and cream mixture until all is used, finishing with cream on top
  9. Heat heavy cream until hot and pour over chocolate chips, let sit, then stir until smooth ganache forms
  10. Pour and spread ganache over the top layer evenly
  11. Cover and refrigerate for at least 6 hours or overnight until set
  12. Slice carefully and serve chilled

Notes

  • Make sure the cream cheese is fully softened before mixing to avoid lumps in the filling
  • Whip the heavy cream to stiff peaks so the layers hold their shape after chilling
  • Fold the whipped cream gently to keep the filling light and airy
  • Chill the cake for at least 6 hours, but overnight gives the best soft, cake-like texture
  • Graham crackers will soften as the cake rests, so do not worry if they feel firm at first
  • Use a deep dish to create more layers and a taller cake
  • Let the ganache cool slightly before spreading so it does not melt the cream layer
  • For clean slices, use a sharp knife and wipe between each cut
  • Store leftovers covered in the refrigerator for up to 3 days
  • This cake is best served cold for the perfect texture and flavor
