Lemon Cobbler

This easy Lemon Cobbler is buttery, gooey, and packed with bright lemon flavor. It’s the perfect summer lemon dessert that comes together in minutes with simple ingredients. Serve warm with ice cream or whipped cream for a comforting treat.

Ingredients
  

  • ½ cup butter melted in baking dish
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 can 21 oz lemon pie filling
  • Zest of 1 lemon for garnish

Method
 

Step 1: Preheat & Melt Butter
  1. Preheat oven to 350°F.
  2. Place butter in a 9x13-inch baking dish and let it melt in the oven while preheating.
Step 2: Make the Batter
  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. Stir in milk and vanilla until smooth.
Step 3: Assemble the Cobbler
  1. Pour batter over the melted butter in the baking dish. Do not stir.
  2. Spoon the lemon pie filling over the batter. Again, don’t stir!
Step 4: Bake
  1. Bake for 40-45 minutes, until golden brown and bubbly.
Step 5: Serve & Enjoy
  1. Sprinkle with lemon zest and serve warm.
  2. Best enjoyed with vanilla ice cream or whipped cream.

Notes

  • Store leftovers at room temp for 1 day or refrigerate for up to 3 days.
  • Reheat in the oven at 300°F for 10 minutes.
