Method
Step 1: Preheat & Melt Butter
- Preheat oven to 350°F.
- Place butter in a 9x13-inch baking dish and let it melt in the oven while preheating.
Step 2: Make the Batter
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in milk and vanilla until smooth.
Step 3: Assemble the Cobbler
- Pour batter over the melted butter in the baking dish. Do not stir.
- Spoon the lemon pie filling over the batter. Again, don’t stir!
Step 4: Bake
- Bake for 40-45 minutes, until golden brown and bubbly.
Step 5: Serve & Enjoy
- Sprinkle with lemon zest and serve warm.
- Best enjoyed with vanilla ice cream or whipped cream.
Notes
- Store leftovers at room temp for 1 day or refrigerate for up to 3 days.
- Reheat in the oven at 300°F for 10 minutes.
