Ingredients

  • 12½ oz fresh strawberries hulled and sliced, plus extra for topping
  • ½ cup granulated sugar
  • 1 cup cold heavy whipping cream

Method

  1. Add strawberries and sugar to a blender and blend until smooth. Set aside ½ cup of the puree.
  2. Whip the cold heavy cream in a chilled bowl until stiff peaks form.
  3. Gently fold the remaining strawberry puree into the whipped cream until just combined.
  4. Spoon the reserved puree into the bottom of 4 glasses, then top with the mousse.
  5. Refrigerate for at least 1 hour or overnight until set.
  6. Top with fresh sliced strawberries and serve cold.

Notes

  • Taste the puree before folding and adjust sugar to match the sweetness of your strawberries — ¼ cup may be enough if they're very ripe
  • Keep mousse refrigerated and serve within 2 days for best texture and freshness
  • Make sure the cream is very cold before whipping — warm cream won't hold its peaks
