Wash, peel, and chop the mango into small pieces. Remove any hard or fibrous parts for a smoother jam texture.
Add chopped mango, sugar, and water to a heavy-bottom pan. Place the pan on medium heat and begin cooking. Stir gently as the sugar starts to dissolve.
Allow the mango to cook for several minutes until it becomes soft and releases its juices. Stir occasionally to prevent sticking.
Use a spoon or masher to break down the mango pieces. Continue cooking while stirring so the mixture becomes thick and evenly textured.
Pour in the lemon juice and mix thoroughly. This helps balance sweetness and supports the jam setting process.
Reduce heat slightly and continue cooking. Stir frequently until the jam thickens and coats the back of a spoon. This should take about 15 to 20 minutes total cooking time.
Place a small amount on a plate and let it cool. Check if it holds its shape. If needed, cook a little longer.
Turn off heat and allow the jam to cool completely. Transfer to a clean jar and store in the refrigerator.
