Ingredients
  

  • 2 cups mango puree
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 1/2 teaspoons gelatin powder
  • 3 tablespoons water

Method
 

  1. Add gelatin powder to water and let it sit for 5 minutes until it becomes thick and gel-like.
  2. In a saucepan, combine milk, heavy cream, and sugar. Heat on low and stir continuously until the sugar dissolves completely. Do not let it boil.
  3. Add the bloomed gelatin into the warm milk mixture. Stir slowly until the gelatin fully dissolves and no lumps remain.
  4. Turn off the heat and allow the mixture to cool slightly for a few minutes.
  5. Add mango puree and mix thoroughly until smooth and evenly combined.
  6. Strain the mixture through a sieve to remove any lumps or fibers for a smoother texture.
  7. Pour the mixture carefully into serving cups or bowls.
  8. Place the cups in the refrigerator and chill for at least 4 hours or until fully set.
  9. Serve chilled and enjoy.

Notes

  • Use ripe mangoes for best flavor and color
  • Adjust sugar based on sweetness of mangoes
  • Do not skip the straining step for a smooth finish
  • Allow enough chilling time for proper setting
