Add the chopped cranberries and gently fold them into the batter until evenly distributed throughout the mixture.
Divide the batter evenly among the prepared muffin cups, filling each cup approximately three-quarters full.
Sprinkle the tops with coarse sugar if using.
Bake for 18 to 22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes.
