Cranberry Cookies

These soft and chewy cranberry cookies are packed with sweet dried cranberries and rich buttery flavor. Perfect for holiday baking, cookie exchanges, dessert platters, or an easy homemade treat any time of year.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups dried cranberries

Method
 

  1. Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar for 2 to 3 minutes until the mixture becomes light, fluffy, and creamy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and continue mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients while mixing on low speed. Continue mixing until a thick cookie dough forms and no dry flour remains visible.
  6. Fold the dried cranberries into the dough using a spatula, making sure they are evenly distributed throughout the mixture.
  7. Scoop approximately 2 tablespoons of dough for each cookie and place onto the prepared baking sheets, leaving about 2 inches between each portion.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers still appear slightly soft.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack.
  10. Cool completely before serving. Store leftovers in an airtight container.

Notes

  • Chill the dough for 30 minutes if thicker cookies are desired.
  • White chocolate chips make an excellent addition.
  • Do not overbake, as the cookies continue cooking while cooling.
  • Store at room temperature for up to 5 days.
  • Freeze baked cookies for up to 3 months.
  • Freeze unbaked cookie dough portions and bake directly from frozen, adding 1 to 2 extra minutes to the baking time.
