Ingredients

  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup espresso or strong brewed coffee cooled
  • 1/4 cup confectioners' sugar
  • 4 oz dark chocolate melted and cooled

Method

  1. Whip the cold heavy cream in a chilled bowl until stiff peaks form. Set aside in the fridge.
  2. In a separate bowl, combine the milk, cooled espresso, powdered sugar, and melted chocolate. Stir until smooth.
  3. Fold the whipped cream into the chocolate coffee mixture in two batches until just combined — no white streaks.
  4. Divide among serving glasses and refrigerate for at least 2 hours until set.
  5. Garnish with cocoa powder and chocolate-covered coffee beans before serving.

Notes

Chill your bowl and beaters before whipping for better volume and peaks. Make sure melted chocolate is fully cooled before combining — warm chocolate will deflate the mousse. This mousse keeps refrigerated for up to 2 weeks, or freeze for up to 6 months and thaw overnight.
