Ingredients
  

For the Biscuits:
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter cut into chunks
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
For the Topping:
  • 2 cups fresh strawberries sliced
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter and use a pastry cutter or two forks to mix it into the dry ingredients until it resembles small crumbs.
  4. Pour in the heavy cream and vanilla extract, stirring gently until a dough forms. Don’t overmix!
  5. Pat the dough into a 1-inch thick rectangle and cut into rounds using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes, or until golden brown.
  6. While the biscuits bake, slice the strawberries and mix with sugar. Let them sit for about 15 minutes to release their juices.
  7. In a chilled bowl, whip the cream and vanilla extract until soft peaks form.
  8. Slice the warm biscuits in half, layer with strawberries, and top with whipped cream. Add the other half of the biscuit and finish with more strawberries and whipped cream.

  • Use cold butter and cream for fluffier biscuits.
  • Let the strawberries sit with sugar for a juicy syrup.
  • This recipe can be easily halved or doubled depending on your needs!
