Step 1: Make the Crust
- Preheat oven to 350°F (175°C).
- Mix crushed graham crackers (or Oreos) with melted butter and sugar until combined.
- Press the mixture into a 9-inch pie dish.
- Bake for 10 minutes, then let it cool completely.
Step 2: Prepare the Chocolate Filling
- In a medium saucepan, heat the heavy cream and milk over medium heat until warm (but not boiling).
- In a separate bowl, whisk the egg yolks, cornstarch, sugar, and salt.
- Slowly pour in some of the warm milk while whisking to temper the eggs.
- Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened (about 5 minutes).
- Remove from heat and stir in chopped chocolate, vanilla, and butter until smooth.
Step 3: Assemble and Chill
- Pour the warm chocolate filling into the cooled crust.
- Refrigerate for at least 4 hours or overnight to set.
Step 4: Add Toppings and Serve
- Top with whipped cream and chocolate shavings before serving.
- Slice, serve, and enjoy!
Notes
- Store leftovers in the fridge for up to 4 days.
- Can be frozen (without whipped cream) for up to 2 months. Thaw in the fridge before serving.
