Cherry Cheesecake

This creamy, rich cherry cheesecake is the perfect dessert for any occasion. With a buttery graham cracker crust, smooth cream cheese filling, and a sweet cherry topping, this homemade cheesecake is as delicious as it is beautiful. Perfect for birthdays, holidays, or just because!

Ingredients
  

For the crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
For the cheesecake filling:
  • 2 8 oz packages cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the cherry topping:
  • 1 can 21 oz cherry pie filling

Method
 

Preheat & Prep
  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan or pie dish.
Make the Crust
  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
Make the Filling
  1. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in vanilla.
Bake the Cheesecake
  1. Pour filling over the crust and bake for 35-40 minutes, until the center is slightly set but still jiggles a little.
Cool & Chill
  1. Let cool on the counter for 1 hour, then refrigerate for at least 4 hours (or overnight).
Add Cherry Topping & Serve
  1. Before serving, spread cherry pie filling over the cheesecake. Slice and enjoy!

Notes

  • Use room temperature ingredients for a smooth batter
  • Let the cheesecake cool gradually to prevent cracks
  • For clean slices, wipe the knife between cuts
