Ingredients

  • 1 1/2 cup pecans chopped
  • 2 tbsp unsalted butter (for toasting)
  • 2 1/2 cup all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 4 large eggs room temperature
  • 1 tbsp vanilla extract
  • 1 cup buttermilk room temperature
  • 1/2 cup unsalted butter (for brown butter frosting)
  • 8 oz block cream cheese softened
  • 4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Method

  1. Melt 2 tbsp butter in a skillet, add pecans and toast 4–5 minutes until fragrant and a shade darker. Cool completely.
  2. Heat oven to 350°F (175°C). Grease and line two 8 or 9-inch round pans.
  3. Brown 1/2 cup butter until golden with toffee smell. Pour into a bowl and chill about 1 hour until soft-solid.
  4. Whisk flour, baking powder, baking soda and salt.
  5. Beat softened butter with brown and white sugar 3–4 minutes until pale and fluffy.
  6. Beat in eggs one at a time, then vanilla.
  7. On low, add flour mix in three parts alternating with buttermilk. Mix only until no dry streaks remain.
  8. Fold in 1 cup toasted pecans.
  9. Divide batter between pans. Bake 25–35 minutes until a toothpick has a few moist crumbs. Cool 10 minutes, then turn out and cool completely.
  10. Beat cream cheese and firmed brown butter until smooth. Add powdered sugar, vanilla and salt and beat 2 minutes.
  11. Frost between layers and over the cake. Top with remaining pecans. Chill 30 minutes before slicing.

Notes

  • Taste your pecans first. Stale nuts make the whole cake taste off.
  • Overmixing after the flour goes in, or scooping flour straight from the bag, are the two main causes of a dense cake.
  • The brown butter must be firmed up, not liquid, or the frosting will be runny.
  • Store in the fridge up to 4 days.
  • Nutrition is an estimate calculated from the ingredients and will vary with brands and portion size.
