Ingredients
Method
- Preheat the oven to 350 degrees Fahrenheit. Line an 8 by 8 inch pan with parchment paper.
- In a bowl, mix flour and sugar for the base. Add butter and mix until crumbly. Press into the pan and bake for 10 to 12 minutes. Let it cool slightly.
- In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla extract. Mix until creamy and combined.
- Pour the cheesecake filling over the base and spread evenly using a spatula.
- In a separate bowl, mix diced apples with sugar, cinnamon, nutmeg, and lemon juice. Spread evenly over the cheesecake layer.
- In a bowl, combine flour, brown sugar, and cinnamon for the topping. Add cold butter and mix until crumbly. Sprinkle over the apple layer.
- Bake for 35 to 40 minutes until the top is lightly golden and the center is set.
- Remove from the oven and allow to cool at room temperature. Then refrigerate for at least 2 to 3 hours.
- Lift from the pan, slice into squares, and serve.
Notes
- Use full-fat cream cheese for the best creamy texture and rich flavor. Low-fat versions may result in a softer filling.
- Make sure the cream cheese is fully softened before mixing to avoid lumps in the cheesecake layer.
- Cut apples into small, even pieces so they cook evenly and soften properly during baking.
- Firm apple varieties such as Fuji, Gala, or Honeycrisp work best because they hold their shape.
- Do not skip pre-baking the base. This helps create a stable layer that does not turn soggy.
- Avoid overmixing the cheesecake batter to prevent too much air, which can cause cracks.
- The center should have a slight jiggle when removed from the oven. It will firm up as it cools.
- Allow the bars to cool completely, then chill for at least 2 to 3 hours for clean slicing.
- For neat cuts, use a sharp knife and wipe it clean between each slice.
- Adding oats to the crumb topping can give extra texture, but it is optional.
- A drizzle of caramel sauce can be added before serving for extra flavor.
- Store leftovers in the refrigerator in an airtight container to keep them fresh.
