Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup butter softened
  • 12 oz cream cheese softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups apples peeled and diced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup butter cold
  • 1/2 tsp cinnamon

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Line an 8 by 8 inch pan with parchment paper.
  2. In a bowl, mix flour and sugar for the base. Add butter and mix until crumbly. Press into the pan and bake for 10 to 12 minutes. Let it cool slightly.
  3. In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla extract. Mix until creamy and combined.
  4. Pour the cheesecake filling over the base and spread evenly using a spatula.
  5. In a separate bowl, mix diced apples with sugar, cinnamon, nutmeg, and lemon juice. Spread evenly over the cheesecake layer.
  6. In a bowl, combine flour, brown sugar, and cinnamon for the topping. Add cold butter and mix until crumbly. Sprinkle over the apple layer.
  7. Bake for 35 to 40 minutes until the top is lightly golden and the center is set.
  8. Remove from the oven and allow to cool at room temperature. Then refrigerate for at least 2 to 3 hours.
  9. Lift from the pan, slice into squares, and serve.

Notes

  • Use full-fat cream cheese for the best creamy texture and rich flavor. Low-fat versions may result in a softer filling.
  • Make sure the cream cheese is fully softened before mixing to avoid lumps in the cheesecake layer.
  • Cut apples into small, even pieces so they cook evenly and soften properly during baking.
  • Firm apple varieties such as Fuji, Gala, or Honeycrisp work best because they hold their shape.
  • Do not skip pre-baking the base. This helps create a stable layer that does not turn soggy.
  • Avoid overmixing the cheesecake batter to prevent too much air, which can cause cracks.
  • The center should have a slight jiggle when removed from the oven. It will firm up as it cools.
  • Allow the bars to cool completely, then chill for at least 2 to 3 hours for clean slicing.
  • For neat cuts, use a sharp knife and wipe it clean between each slice.
  • Adding oats to the crumb topping can give extra texture, but it is optional.
  • A drizzle of caramel sauce can be added before serving for extra flavor.
