Ingredients
  

Crust:
  • 1 ½ cups graham cracker crumbs
  • cup melted butter
  • 2 tbsp sugar
Cheesecake Filling:
  • 16 oz cream cheese softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
Apple Caramel Topping:
  • 1 cup peeled and diced apples
  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract

Method
 

Step 1: Make the crust
  1. Mix graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan. Bake at 350°F for 8 minutes. Let cool.
Step 2: Prepare cheesecake filling
  1. Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and sour cream. Fold in diced apples. Pour over crust.
Step 3: Bake cheesecake
  1. Bake at 325°F for 50-55 minutes. Center should jiggle slightly. Cool completely, then chill 4+ hours.
Step 4: Make caramel topping
  1. Melt butter and brown sugar in a saucepan. Stir in heavy cream and vanilla. Add in the diced apple and cook for 5 more minutes on medium low heat. Let it cool slightly before pouring over the cheesecake.
Step 5: Serve
  1. Slice carefully and enjoy. Optional: sprinkle a little cinnamon on top.

  • Use firm apples like Honeycrisp or Granny Smith.
  • Cheesecake can be made ahead and refrigerated overnight.
  • Freezes well for a few weeks, just wrap tightly in plastic and foil.
