Step 1: Make the crust
- Mix graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan. Bake at 350°F for 8 minutes. Let cool.
Step 2: Prepare cheesecake filling
- Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and sour cream. Fold in diced apples. Pour over crust.
Step 3: Bake cheesecake
- Bake at 325°F for 50-55 minutes. Center should jiggle slightly. Cool completely, then chill 4+ hours.
Step 4: Make caramel topping
- Melt butter and brown sugar in a saucepan. Stir in heavy cream and vanilla. Add in the diced apple and cook for 5 more minutes on medium low heat. Let it cool slightly before pouring over the cheesecake.
Step 5: Serve
- Slice carefully and enjoy. Optional: sprinkle a little cinnamon on top.
