  • 1 cup (200g) packed light or dark brown sugar
  • 2 large eggs
  • 1 and 1/2 cups (360ml) heavy cream
  • 1 tsp pure vanilla extract
  • 1 tbsp cornstarch
  • 1 and 1/2 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper

Ingredient Notes and Substitutions

Pecans in the crust — This is what makes this crust different from any other. The pecans go straight into the food processor with the graham crackers and get blitzed together, so the whole crust takes on a warm toasty nut flavour that is genuinely incredible. Do not skip them if you can avoid it. Walnuts work as a swap. If there is a nut allergy, add an extra 1/4 cup graham cracker crumbs and an extra 1 tbsp of melted butter to compensate.

Brown sugar — Light or dark brown sugar both work. Dark brown gives a slightly deeper, more molasses-forward flavour. Either is a significant upgrade over plain granulated sugar in the filling.

Heavy cream — Do not swap for evaporated milk or half and half. The heavy cream is what gives the filling that extra silky richness. Use the full amount.

Cornstarch — One tablespoon helps the filling set cleanly and slice without crumbling. Do not skip it.

Black pepper — The secret ingredient. Just 1/8 teaspoon. Nobody will taste pepper — they will taste the most deeply, warmly spiced pumpkin filling they have ever had and not be able to figure out why. It works. Trust it.

Pumpkin puree — Canned, pure pumpkin only. Not pumpkin pie filling. Libby is the most reliable brand. Fresh homemade puree can make the filling too wet and prevent it from setting properly.


Step-by-Step Instructions

Step 1: Prep the Pan and Oven

Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper leaving enough overhang on two sides to use as handles when lifting the bars out later.

Step 2: Make the Pecan Graham Cracker Crust

Add the graham cracker sheets (or crumbs) and chopped pecans to a food processor. Pulse until fine crumbs form — a few slightly larger pieces of pecan are completely fine and add a little texture. Add the granulated sugar and melted butter and pulse until everything is evenly combined and holds together when squeezed.

Press the crust mixture very firmly into the bottom of the prepared pan. Use the flat bottom of a measuring cup or glass to pack it in tightly and evenly. The tighter you pack the crust, the cleaner it will slice.

Pre-bake for 12 minutes. Leave the oven on.

Step 3: Make the Pumpkin Pie Filling

While the crust pre-bakes, add all of the filling ingredients to a large bowl — pumpkin puree, brown sugar, eggs, heavy cream, vanilla, cornstarch, pumpkin pie spice, cinnamon, salt, and black pepper. Whisk everything together vigorously until completely smooth and combined. The mixture will look quite liquid and that is exactly right.

Step 4: Fill and Bake

Pour the pumpkin filling directly over the warm pre-baked crust. No need to wait for it to cool.

Bake at 350 degrees Fahrenheit for 40 to 50 minutes until the center is no longer jiggly. The filling should be fully set all the way to the center when you give the pan a gentle shake — unlike a whole pumpkin pie where a little wobble in the center is okay, you want these bars fully set before pulling them out.

Step 5: Cool and Chill

Remove from the oven and set on a wire rack. Cool completely at room temperature — this takes about 1 hour. Then cover and refrigerate for at least 1 hour, or up to 3 days.

Do not try to slice them warm. The filling needs to be fully chilled to hold its shape and slice cleanly.

Step 6: Slice and Serve

  • Freezing: baked and cooled bars freeze well up to 3 months. Wrap tightly, thaw overnight in the fridge.
  • Nut-free crust: omit pecans, add 1/4 cup extra graham cracker crumbs and 1 extra tbsp melted butter.
  • Do not use pumpkin pie filling — pure pumpkin puree only.
  • The black pepper is the secret — do not skip it. Nobody will taste it but everyone will taste the difference.
  • Pumpkin pie spice substitute: use 1/2 tsp each of ground allspice and ground ginger, plus 1/4 tsp each of ground nutmeg and ground cloves. Keep the 1 tsp cinnamon.
